1 Recipe Water Fondant
  Green food coloring
  Oil of wintergreen flavoring
  Red food coloring
  Peppermint oil flavoring

A colorful way to serve party mints.

Divide Water Fondant into 4 equal parts. Color one portion light green and flavor with oil of wintergreen. Roll between 2 pieces of waxed paper to a rectangle about 14 x 5-inches. Remove top piece of waxed paper. Roll 1 portion of white fondant between two pieces of waxed paper to same size. Remove top piece of waxed paper. Lift white fondant by paper, invert on top of green. Press layers together. Remove top piece of waxed paper. Roll tightly, jelly roll fashion, removing waxed paper as you roll. Wrap roll in waxed paper. Chill about one hour until firm but not hard. Cut into 1/4-inch slices. Repeat process with other two portions, coloring one part pink with flavoring of peppermint oil. In a cool place, store candy between layers of waxed paper in covered containers. Makes 50 - 60 mints.
